Place butter, mixed fruit , cherries, rum, orange juice and sugar in a medium saucepan over medium heat. Cook, stirring occasionally, for 5 minutes or until butter has melted and sugar has dissolved. Reduce heat to medium-low and simmer, stirring occasionally, for 3-4 minutes or until mixture reduces slightly. Remove from heat and stir in bicarbonate of soda. Transfer to a large bowl and cool completely. With just four ingredients and a little bit of flare, this super-easy fruit cake is the perfect dessert to make this Christmas. Place fruit , crushed pineapple including juice, butter, sugar and spices in a saucepan. Boil for 5 minutes. This cake is so easy to make and tastes great! My husband has diabetes, but can still indulge his sweet tooth, as this cake has no added sugar. Great warmed from the oven, cold spread with butter, or heated with custard. Enjoy!
